Weir 'Beer' Hayden, the Youngest Brewer in San Diego

There’s something brewing off the 78 freeway in San Marcos

A local brewery, Dos Desperadoreached its 5th year anniversary as a family owned business. Back in their brew laboratory, they have one of the youngest head brewers in History. His name is Hayden Weir, a local Cal State San Marcos Alumni. Hayden is 25 years old, but he has been brewing since the age he could drink it. I was able to connect with him on his brewing styles and his future goals as a head brewer.

Hayden Weir has enjoyed brewing beer ever since the day he purchased his miniature brewery set from a target store (imagine that)! Hayden became a full-time brewer after he received his environmental science degree while finishing up his last year playing college baseball for CSUSM.

The more time he spent in the brewing laboratory, the more knowledge he gained about the brewing process. The timing between adding Hops, whether you add it early or later, can determine how the taste of the beer will be. The locals of Dos desperados have a personal taste for his first, personally made, a beer called the "Hazy Daisy." Weir's beer is a New England Hazy I.P.A (Indiana Pale Ale) and has boomed his reputation, even making beer of the week in 2018 by West Coaster Beer. 

What makes Hayden’s beer unique to him is that he named his beer after his golden retriever.


He didn’t want his beer to be known as an overly bitter beer, known as a "juice bomb." However, he knew he wanted to add a slight amount of Hops into the brewing process to create a light bitter taste.

Hayden’s Goals as a Head brewer is to continue to reach out to the community to be the cheers of San Marcos. He loves the staff at Dos Desperado, and he considers the regulars his second family. Along his journey, he has learned a lot from the beer veterans and the different styles of beer to bring to the table. He wants his brewing styles to come natural and let his tasters decide. Hayden wants to grow with the company and hopefully, soon start a brewery called “Weir Beer.”
